Cheeses at Lolo Dad’s Brasserie

Thanks a bunch to USDA Cheese for all the American cheeses they provided and to Chef Ariel Manuel for the wonderful cheese menu that he whipped up. It was truly a feast for all five senses. Or probably six: I saw visions after the first bite.

The Joys of USDA Cheese

Started the meal with this. Silver Lake Sharp Cheddar and Romaine Lettuce Soup with Smoke Salmon Bruschetta. The salmon was wonderful and the soup was creamy and heavenly. The taste of the sharp cheddar perfectly complimented the savory flavor of the smoked salmon.

For the main course, I had Pepper Jack, Swiss and Provolone Cheese Pizza with Mushroom and Fresh Spinach. Of all these cheeses I love Provolone.

What is Provolone cheese?

Though originally Italian, Provolone is also produced in some of California’s select farms. Similar of Mozzarella, it is also chewy when heated and cooked with pasta, but with a fuller and sharper flavor. It can be bought here in Manila from grocery stores like S&R membership shopping or Rustan’s Supermarkets. SM Hypermarts may also have this cheese. This cheese is best paired with fruity wines like Cabernet Sauvignon, which Lolo Dad’s had generously provided. In copious amounts.

The pasta dish was Baked Cheswick Colby Jack Pancetta and Rigatoni Pasta with Vegetable Fritter.

What is Rigatoni?

Rigatoni is a tube-shaped pasta with ridges that are best cooked with chunky meaty sauces or thick and heavy creams. Its shape allows for heavy creams to adhere better to the pasta because of the ridges. The holes help it hold meats or vegetables to give the diner an enriching pasta experience.

to russel: hey bro! i was there last july, too bad i couldn’t find you. yeah, the cheeses were great!

to crissy: sadly this was something done only for usda cheese. but lolo dad’s has a wide selection of cheese dishes that you will surely love. visit it one of these days!
